Description

A vibrant, zesty shrimp ceviche served with homemade Tajin chips, perfect for gatherings and summer celebrations.

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1 medium red onion, finely chopped
  • 2 medium tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • Salt and pepper to taste
  • Homemade Tajin chips

Instructions

  1. Cut the shrimp into small, even pieces and place them in a sizable bowl.
  2. Pour the lime juice over the shrimp and stir gently to coat.
  3. Cover the bowl and refrigerate for about 30 minutes to marinate.
  4. After 30 minutes, check the shrimp; they should be opaque.
  5. Add the red onion, tomatoes, cilantro, and jalapeño to the bowl. Season with salt and pepper to taste.
  6. Mix everything gently until well combined.
  7. Serve immediately with homemade Tajin chips on the side.

Notes

For extra flavor, consider garnishing with additional cilantro or lime wedges. Experiment with varying jalapeño for different spice levels.
