Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 cup fresh lime juice
- 1/2 cup diced red onion
- 1 cup diced tomatoes
- 1/2 cup chopped cilantro
- 1 jalapeño, finely chopped
- Salt to taste
- Avocado slices for serving
- Tortilla chips for serving
Instructions
- Boil the shrimp in a pot of salted water for 2-3 minutes until it turns pink and cooked through.
- Drain the shrimp and allow it to cool completely.
- In a separate bowl, combine fresh lime juice, diced red onion, diced tomatoes, chopped cilantro, finely chopped jalapeño, and a pinch of salt.
- Dice the cooled shrimp and add it to the mixture in the bowl. Stir well.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve the ceviche with avocado slices and tortilla chips.
