Description

A vibrant and refreshing shrimp ceviche combining fresh shrimp, citrusy lime juice, and crunchy vegetables, perfect for summer gatherings.


Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup diced red onion
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1 jalapeño, finely chopped
  • Salt to taste
  • Avocado slices for serving
  • Tortilla chips for serving


Instructions

  1. Boil the shrimp in a pot of salted water for 2-3 minutes until it turns pink and cooked through.
  2. Drain the shrimp and allow it to cool completely.
  3. In a separate bowl, combine fresh lime juice, diced red onion, diced tomatoes, chopped cilantro, finely chopped jalapeño, and a pinch of salt.
  4. Dice the cooled shrimp and add it to the mixture in the bowl. Stir well.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve the ceviche with avocado slices and tortilla chips.

Notes
