Description

A healthier version of the classic shrimp casserole that combines tender shrimp, creamy sauces, and a crunchy topping, perfect for family gatherings.


Ingredients

  • 2 pounds large shrimp (21-24 count), peeled and deveined
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon salt for cooking water
  • 2/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter, plus more for greasing the pan
  • 1/2 cup panko breadcrumbs
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 2 1/2 quart casserole dish with butter.
  3. Bring a large pot of salted water to a boil and add the Old Bay seasoning.
  4. Add the shrimp and cook until opaque, about 30 seconds.
  5. Drain the shrimp and transfer them to a mixing bowl.
  6. In the bowl, add mayonnaise, garlic powder, and black pepper, stirring to coat the shrimp evenly.
  7. Mix in the shredded mozzarella and cheddar cheese.
  8. Transfer the mixture to the greased casserole dish.
  9. Melt the butter and mix it with panko breadcrumbs, then sprinkle it over the shrimp mixture.
  10. Bake uncovered for 13-15 minutes or until the center reaches 145°F.
  11. Broil for an additional 1-2 minutes for a golden crust.
  12. Let rest for 15 minutes before serving.

Notes

Use fresh shrimp when possible and feel free to experiment with additional seasonings. Keep an eye on the casserole during baking to prevent burning the breadcrumbs.
