A creamy and dreamy seafood delight that combines shrimp, cheese, and rice for a comforting family meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 cup cooked white rice
- 1 ½ cups shredded cheddar cheese
- 1 cup sour cream
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons butter, melted
- ½ cup breadcrumbs
- Fresh parsley, chopped (optional)
Instructions
- In a skillet, melt the butter over medium heat. Add the shrimp and season with salt, pepper, garlic powder, onion powder, and paprika. Cook until the shrimp turns pink, about 3-5 minutes. Remove from heat and set aside.
- Fold in the cooked rice and shredded cheddar cheese into the shrimp mixture, stirring until smooth and well-coated.
- Grease a 9×13-inch baking dish and transfer the shrimp and rice mixture into the dish, spreading it out evenly.
- Bake the casserole in the preheated oven at 350°F (175°C) for 25-30 minutes, or until the top is golden and bubbling.
- Slice and serve hot, accompanied by your favorite side dishes.
Notes
For optimal results, use fresh shrimp instead of frozen. Experiment with different cheeses and consider adding cooked vegetables for more flavor.
