Description

A vibrant and nutritious rice bowl featuring succulent shrimp, fresh mango, creamy avocado, and crunchy vegetables, all dressed with a zesty citrus dressing.


Ingredients

  • Fresh or frozen shrimp (peeled and deveined)
  • Cooked rice (brown, jasmine, or sticky)
  • Diced ripe mango
  • Diced ripe but firm avocado
  • Mixed crunchy vegetables (bell peppers, cucumbers, carrots)
  • Citrus dressing (lime or lemon juice, olive oil, salt, and pepper)
  • Optional: Fresh cilantro for garnish


Instructions

  1. In a skillet, cook the shrimp over medium heat until pink and cooked through, about 3-4 minutes.
  2. In a bowl, combine the cooked rice, diced mango, diced avocado, and mixed crunchy vegetables.
