Ingredients
- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a bowl, combine diced mango, red onion, cilantro, and lime juice to make the mango salsa. Set aside.
- In a pan over medium heat, add olive oil and season the shrimp with chili powder, salt, and pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.
- To assemble, place diced avocado in a bowl, top with cooked shrimp and mango salsa. Drizzle with additional lime juice and serve immediately.
