Description

A vibrant and refreshing bowl featuring shrimp, avocado, and mango salsa, perfect for a quick and healthy meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. In a bowl, combine diced mango, red onion, cilantro, and lime juice to make the mango salsa. Set aside.
  2. In a pan over medium heat, add olive oil and season the shrimp with chili powder, salt, and pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.
  3. To assemble, place diced avocado in a bowl, top with cooked shrimp and mango salsa. Drizzle with additional lime juice and serve immediately.
