Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1-2 ripe avocados, sliced
  • 1 large ripe mango, diced
  • 2 cups cooked rice or quinoa
  • Lime juice and zest
  • Fresh cilantro, chopped
  • Chili powder
  • Salt and pepper to taste


Instructions

  1. Prepare the mango salsa by combining diced mango with lime juice, chopped cilantro, and salt in a bowl. Chill while preparing the shrimp.
  2. Whisk together Greek yogurt, lime juice, lime zest, honey, salt, and pepper to create the lime-chili sauce.
  3. Season shrimp with chili powder, salt, and pepper. Grill in a pan over medium-high heat for 2-3 minutes on each side until pink and charred.
  4. Assemble bowls with cooked rice or quinoa, topped with grilled shrimp, sliced avocado, and mango salsa.
  5. Drizzle lime-chili sauce over each bowl and garnish with fresh cilantro.
