A quick and wholesome shrimp and asparagus stir-fry with mushrooms, vibrant colors and fresh flavors make this dish a perfect choice for busy weeknights.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into pieces
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove shrimp from the skillet and set aside.
- In the same skillet, add asparagus and mushrooms, stir-frying for about 4-5 minutes until tender-crisp.
- Return shrimp to the skillet, add soy sauce, oyster sauce (if using), salt, and pepper.
- Toss everything together and cook for an additional minute.
- Serve over cooked rice or noodles.
Notes
Using fresh shrimp elevates the flavor. Consider marinating shrimp for extra taste.
