Description

A quick and wholesome shrimp and asparagus stir-fry with mushrooms, vibrant colors and fresh flavors make this dish a perfect choice for busy weeknights.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into pieces
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add asparagus and mushrooms, stir-frying for about 4-5 minutes until tender-crisp.
  5. Return shrimp to the skillet, add soy sauce, oyster sauce (if using), salt, and pepper.
  6. Toss everything together and cook for an additional minute.
  7. Serve over cooked rice or noodles.

Notes

Using fresh shrimp elevates the flavor. Consider marinating shrimp for extra taste.
