Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb sausage, sliced
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 cup celery, chopped
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 tablespoons Cajun seasoning
- 1/4 cup vegetable oil
- 1/4 cup flour
- Salt and pepper to taste
- Cooked rice for serving
- Green onions for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Stir in the flour to make a roux, cooking until it turns a dark brown color.
- Add the onion, bell pepper, and celery, cooking until the vegetables are soft.
- Add the sausage and cook until browned.
- Stir in the diced tomatoes, chicken broth, and Cajun seasoning.
- Bring to a simmer and cook for about 20 minutes.
- Add the shrimp and cook until they are pink and cooked through.
- Season with salt and pepper.
- Serve over cooked rice and garnish with green onions.
Notes
Don’t rush the roux; the darker it is, the more flavor it brings.
