Ingredients
- 1 pound shrimp, peeled and deveined
- 2 bell peppers, sliced (any colors)
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced bell peppers and stir-fry for about 2-3 minutes until they start to soften.
- Add the garlic and ginger, and stir-fry for another minute until fragrant.
- Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
- Pour in the soy sauce, stirring to coat everything evenly.
- Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles.
