Description

A refreshing seafood salad with shrimp, calamari, and vibrant vegetables, perfect for summer gatherings.


Ingredients

  • 1 pound fresh shrimp
  • 1 pound calamari
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Clean the shrimp and calamari and cook them in boiling water for 2–3 minutes until just done. Drain and let cool.
  2. Combine chopped cherry tomatoes, diced cucumber, and chopped parsley in a large bowl.
  3. Whisk together lemon juice, olive oil, minced garlic, salt, and pepper in a separate small bowl to make the dressing.
  4. Add cooled shrimp and calamari to the vegetable mixture, pour the dressing over it, and toss everything to combine.
  5. Serve chilled or at room temperature, garnished with additional parsley if desired.
