A refreshing seafood salad with shrimp, calamari, and vibrant vegetables, perfect for summer gatherings.
Ingredients
- 1 pound fresh shrimp
- 1 pound calamari
- 1 lemon, juiced
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Clean the shrimp and calamari and cook them in boiling water for 2–3 minutes until just done. Drain and let cool.
- Combine chopped cherry tomatoes, diced cucumber, and chopped parsley in a large bowl.
- Whisk together lemon juice, olive oil, minced garlic, salt, and pepper in a separate small bowl to make the dressing.
- Add cooled shrimp and calamari to the vegetable mixture, pour the dressing over it, and toss everything to combine.
- Serve chilled or at room temperature, garnished with additional parsley if desired.
