Description

A delightful seafood pasta dish featuring fresh shrimp, mussels, and vibrant cherry tomatoes, perfect for gatherings.


Ingredients

  • 8 oz spaghetti or pasta of choice
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels or clams, cleaned
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup parsley, chopped
  • Juice of one lemon
  • Red pepper flakes (optional)
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving some pasta water.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the shrimp to the pan. Cook until they turn pink, approximately 3-5 minutes.
  4. Stir in the mussels or clams. Cover the pan to steam them until they open, about 5-7 minutes.
  5. Mix in the cherry tomatoes and cook for another 2 minutes.
  6. Combine the cooked pasta with the seafood. Add lemon juice, parsley, and red pepper flakes if using. Toss everything together, adding reserved pasta water as needed to create a cohesive dish.
  7. Season with salt and pepper to taste.

Notes

For best results, ensure seafood is fresh and pasta is cooked al dente. Adjust red pepper flakes according to heat preference.
