A delightful seafood pasta dish featuring fresh shrimp, mussels, and vibrant cherry tomatoes, perfect for gatherings.
Ingredients
- 8 oz spaghetti or pasta of choice
- 1 lb shrimp, peeled and deveined
- 1 lb mussels or clams, cleaned
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup cherry tomatoes, halved
- 1/2 cup parsley, chopped
- Juice of one lemon
- Red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving some pasta water.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
- Add the shrimp to the pan. Cook until they turn pink, approximately 3-5 minutes.
- Stir in the mussels or clams. Cover the pan to steam them until they open, about 5-7 minutes.
- Mix in the cherry tomatoes and cook for another 2 minutes.
- Combine the cooked pasta with the seafood. Add lemon juice, parsley, and red pepper flakes if using. Toss everything together, adding reserved pasta water as needed to create a cohesive dish.
- Season with salt and pepper to taste.
Notes
For best results, ensure seafood is fresh and pasta is cooked al dente. Adjust red pepper flakes according to heat preference.
