Description

A creamy and flavorful seafood dish combining cod, shrimp, and scallops in a rich sauce, perfect for special occasions or a cozy family dinner.


Ingredients

  • 1 1/2 tablespoons extra-virgin olive oil
  • 1/2 pound cod, cut into 1-inch pieces
  • 1/3 pound medium shrimp, peeled and cleaned
  • 1/4 pound sea scallops, quartered
  • 1/3 teaspoon kosher salt
  • 1/3 teaspoon freshly cracked black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons butter
  • 2 tablespoons minced shallots
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Pinch of nutmeg (optional)
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup half & half
  • 1/2 teaspoon kosher salt (to taste)
  • 1/2 teaspoon freshly cracked black pepper (to taste)
  • 2 tablespoons dry sherry
  • Bunch of flat-leaf Italian parsley
  • Your favorite side dish


Instructions

  1. In a large bowl, combine the cod, shrimp, and sea scallops. Season with 1/3 teaspoon kosher salt and 1/3 teaspoon freshly cracked black pepper, then set aside.
  2. Heat 1 1/2 tablespoons of olive oil in a non-stick pan over medium heat. Add the seafood and cook for about 6 minutes. Remove the seafood and place it in a bowl, squeezing lemon juice over it.
  3. In the same pan, melt 2 tablespoons of butter over medium heat. Add minced shallots, paprika, cayenne pepper, and nutmeg, stirring for about 2 minutes until the shallots become translucent.
  4. Stir in 2 tablespoons of flour and gradually add 1 cup of milk and 1/2 cup of half & half until the sauce reaches your desired thickness. Adjust seasoning with additional salt and pepper to taste.
  5. Introduce 2 tablespoons of dry sherry to the sauce and whisk for an additional 30 seconds.
  6. Reintroduce the cooked seafood to the sauce, gently stir, and heat through.
  7. Serve over pasta or alongside bread, garnished with chopped parsley.

Notes

For a thicker sauce, let it simmer longer. You can also add vegetables like spinach or peas for added freshness.
