Ingredients
- 8 ounces fettuccine pasta
- 2 tablespoons olive oil
- 2 salmon fillets, skinless
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, saving a bit of pasta water for later.
- In a large skillet over medium heat, add olive oil. Season the salmon fillets with salt and pepper, then place them in the skillet.
- Cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and flake into bite-sized pieces.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in the heavy cream, stirring to combine. Simmer for a few minutes, then gradually whisk in the Parmesan cheese until the sauce becomes smooth and creamy.
- Toss the cooked fettuccine in the sauce, adding a splash of the reserved pasta water if needed to achieve your desired consistency.
- Fold in the flaked salmon gently, allowing the flavors to meld.
- Serve on warm plates and garnish with fresh parsley.

Use freshly grated Parmesan for richer flavor. Add lemon juice for brightness and consider incorporating herbs like basil or thyme.
