A heartwarming rustic seafood soup that combines fresh seafood and aromatic vegetables in a light broth, perfect for any occasion.
Ingredients
- 1 lb mixed seafood (shrimp, clams, mussels, fish)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups fish stock or vegetable broth
- 1 cup diced tomatoes (canned or fresh)
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté until softened, about 5 minutes.
- Stir in diced tomatoes, fish stock, bay leaf, thyme, salt, and pepper. Bring to a simmer.
- Add the mixed seafood to the pot and cook until they are cooked through, about 5-7 minutes.
- Taste and adjust seasoning if necessary.
- Remove bay leaf before serving.
- Garnish with fresh parsley and serve warm.

For an extra layer of flavor, consider adding a sprinkle of lemon zest before serving.
