Ingredients

  • – 2 lbs (900 g) chicken tenders, thighs, or breast
  • – 2 tbsp (30 ml) olive oil
  • – 1 stick margarine
  • – 8-10 cloves garlic, minced
  • – 1/2 cup (50 g) grated plant-based parmesan
  • – 1 tbsp (15 ml) hot sauce more if desired
  • – 2 teaspoons (10 ml) red pepper flakes
  • – 1/3 cup (80 ml) fresh parsley, minced
  • – 1 tbsp (15 ml) dry ranch seasoning
  • – 1 tsp (5 ml) dried dill
  • – 1/2 tsp (3 ml) onion powder
  • – 1.5 tbsp (22.5 ml) dry ranch seasoning
  • – 1 tsp (5 ml) dried dill
  • – 2 tsp (10 ml) paprika
  • – 1 tsp (5 ml) garlic powder
  • – 1 tsp (5 ml) onion powder
  • – 1/2 tsp (3 ml) salt
  • – 1/2 tsp (3 ml) pepper


Instructions

  1. Before you begin, ensure your wooden skewers are submerged in water for a minimum of 30 minutes.
  2. First, mix together your chicken seasoning blend in a small dish and set it aside. Prepare your chicken by slicing it into 3-inch pieces. Put the chicken in a large bowl or a resealable bag and drizzle with olive oil, then add the spices, ensuring every piece is thoroughly coated.
  3. Thread the chicken pieces onto each skewer, packing them closely together without gaps for optimal juiciness. If necessary, trim the top of the skewers to fit them into the air fryer once the chicken is threaded.
  4. In a microwave-safe bowl, combine the margarine and minced garlic, then heat until they are partially melted. Add the red pepper flakes, hot sauce, seasonings, and plant-based parmesan, whisking everything together until well mixed. (If the mixture separates, add 1-2 tablespoons of softened margarine and stir until smooth again.)
  5. Take out one-third of the sauce for brushing over the partially cooked chicken, and keep the rest for the fully cooked chicken to avoid contamination. Remember to clean your basting brush between uses.
  6. Cook 2-3 skewers at a time in an air fryer set to 400 degrees Fahrenheit for 5 minutes. Remove them, turn the skewers over, brush with sauce, and return to the air fryer for another 2 minutes at the same temperature.
  7. Turn them once more, apply more sauce, and cook for an additional 5-6 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit, totaling 12-14 minutes of cooking time, depending on your air fryer.
