Ingredients

  • 1/3 cup olive oil (80 ml)
  • 4 tablespoons of pureed chipotles in adobo (100 g chipotles in adobo)
  • 3 tablespoons lime juice (45 ml)
  • 1 tablespoon minced garlic (15 g)
  • A pinch of salt and pepper
  • 3 pounds chicken wings, wing tips removed, and wings cut into two sections (1.4 kg)
  • 1/2 cup plain yogurt (120 ml)
  • 2 tablespoons lime juice (30 ml)
  • Handful of chopped cilantro
  • Salt


Instructions

  1. In a large mixing bowl, combine the olive oil, chipotles, lime juice, garlic, and a dash of salt and pepper. Set this mixture aside.
  2. **Oven Approach:** Preheat your oven to 400 degrees F and prepare a rimmed baking sheet by lining it with parchment paper. Arrange the wings with the skin facing up on the sheet and bake for 35 minutes.
  3. Take the wings out of the oven, coat them with the prepared sauce, and place them back in the oven for another 10 minutes.
  4. Keep them on the middle rack, switch on the broiler, and broil the wings for 3 to 6 minutes, keeping a close eye on them.
  5. **Grilling Approach:** Make the sauce as outlined in the oven method.
  6. Coat the wings lightly with some neutral oil to prevent sticking (this step isn’t needed for the oven method).
  7. Preheat your grill, ensuring one side is cooler for indirect heat.
  8. Place the wings on the cooler side of the grill, cover, and grill them, turning occasionally, until fully cooked, approximately 15 to 20 minutes.
  9. Toss the wings in the sauce bowl to coat them thoroughly. Move the wings to the hotter part of the grill and grill without cover, turning to brown them evenly.
  10. Mix the yogurt, lime juice, cilantro, and salt together, and chill until it’s time to serve.
