Description

A comforting and nutritious potato and spinach casserole that’s simple to make and perfect for family dinners.


Ingredients

  • 4 medium potatoes, peeled and cut into slices or cubes
  • 1 onion, finely chopped
  • 250g spinach, washed and roughly chopped
  • 4 eggs
  • 100g soft cream cheese
  • 150g hard cheese, grated


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a baking dish, layer the potatoes to create a uniform base.
  3. Sprinkle the chopped onion and spinach over the potatoes.
  4. In a mixing bowl, beat the eggs together with the soft cream cheese until well combined.
  5. Pour the egg and cream cheese mixture over the layered vegetables in the baking dish.
  6. Top with grated hard cheese, ensuring an even spread.
  7. Bake in the oven for 40-50 minutes, or until the potatoes are tender and the top is golden brown.
  8. Allow the casserole to rest for a few moments before serving.
