- 4 medium potatoes, peeled and cut into slices or cubes
- 1 onion, finely chopped
- 250g spinach, washed and roughly chopped
- 4 eggs
- 100g soft cream cheese
- 150g hard cheese, grated
Instructions

- Sprinkle the chopped onion and spinach over the potatoes.
- In a mixing bowl, beat the eggs together with the soft cream cheese until well combined.
- Pour the egg and cream cheese mixture over the layered vegetables in the baking dish.
- Top with grated hard cheese, ensuring an even spread.
- Bake in the oven for 40-50 minutes, or until the potatoes are tender and the top is golden brown.
