Description
Baked cod fillets coated with a crunchy pistachio crust and drizzled with a rich lemon butter sauce.
Ingredients
- 4 cod fillets
- 1 cup crushed pistachios
- 3 tablespoons butter
- 2 tablespoons lemon juice
- Salt, to taste
- Pepper, to taste
- Olive oil, for brushing
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Mix crushed pistachios with salt and pepper in a bowl.
- Brush cod fillets with olive oil and press the pistachio mixture onto the top of each fillet.
- Place the fillets on a baking sheet and bake for 12-15 minutes or until the fish flakes easily with a fork.
- Melt butter in a small saucepan over medium heat, add lemon juice, and stir until combined.
- Serve the baked cod drizzled with lemon butter sauce and garnish with fresh parsley.
