Ingredients
- 3 cups cooked day-old jasmine rice
- 1 to 1½ cups pineapple chunks
- ½ cup diced onion
- 3 cloves garlic, minced
- 1 cup total peas and carrots
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 teaspoon fish sauce
- ⅓ cup cashews or peanuts (optional)
- 2 tablespoons oil
Instructions
- In a hot skillet or wok, sauté garlic and onions in oil until fragrant.
- Toss in peas and pineapple chunks, allowing the pineapple to brown slightly.
- Push everything to the side, scramble the eggs, then stir all together.
- Add the cold, day-old rice along with soy sauce and fish sauce, stirring until everything is coated and heated through.
- Optionally, garnish with green onions and cashews or peanuts, and serve with lime wedges.
Notes
Use day-old rice for better texture; adjust pineapple sweetness to your preference.
