A comforting shrimp scampi pasta bake that combines short pasta, juicy shrimp, and a creamy sauce, topped with melting cheese for a delightful dinner.
Ingredients
- 8 ounces short pasta (penne, ziti, or rigatoni)
- 1 pound thawed shrimp
- 3 cloves garlic, minced
- 4 tablespoons butter (or olive oil)
- 1 tablespoon lemon juice
- 1 cup cream
- 1 teaspoon red pepper flakes (optional)
- 1 cup chicken broth
- 1 cup mozzarella cheese
- 1/2 cup Parmesan cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Bring a large pot of salted water to a boil. Cook the short pasta according to package directions until al dente, drain, and set aside.
- In a skillet over medium heat, melt the butter or olive oil. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the thawed shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
- Squeeze in the lemon juice and then add the cream and chicken broth, mixing well to create a rich sauce. Optionally add red pepper flakes and let simmer for about 5 minutes.
- In a large bowl, combine the drained pasta with the shrimp and creamy sauce. Stir in the mozzarella and Parmesan cheese evenly.
- Transfer the mixture to a greased 9×13-inch baking dish and top with additional cheese.
- Bake for 25-30 minutes until bubbly and the cheese is melted and golden.
Notes
Allow the dish to sit for a few moments after baking for easier serving. Sprinkle with fresh parsley for added flavor and presentation.
