Description

A comforting shrimp scampi pasta bake that combines short pasta, juicy shrimp, and a creamy sauce, topped with melting cheese for a delightful dinner.


Ingredients

  • 8 ounces short pasta (penne, ziti, or rigatoni)
  • 1 pound thawed shrimp
  • 3 cloves garlic, minced
  • 4 tablespoons butter (or olive oil)
  • 1 tablespoon lemon juice
  • 1 cup cream
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 cup mozzarella cheese
  • 1/2 cup Parmesan cheese


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil. Cook the short pasta according to package directions until al dente, drain, and set aside.
  3. In a skillet over medium heat, melt the butter or olive oil. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the thawed shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  5. Squeeze in the lemon juice and then add the cream and chicken broth, mixing well to create a rich sauce. Optionally add red pepper flakes and let simmer for about 5 minutes.
  6. In a large bowl, combine the drained pasta with the shrimp and creamy sauce. Stir in the mozzarella and Parmesan cheese evenly.
  7. Transfer the mixture to a greased 9×13-inch baking dish and top with additional cheese.
  8. Bake for 25-30 minutes until bubbly and the cheese is melted and golden.

Notes

Allow the dish to sit for a few moments after baking for easier serving. Sprinkle with fresh parsley for added flavor and presentation.
