Ingredients
- 1 1/4 pounds of cod fillets, cut into strips or bite-sized pieces
- 1/2 cup of flour for dredging
- 2 eggs, beaten for dipping
- 1 cup of panko bread crumbs
- 3/4 teaspoon of salt
- 1/2 teaspoon of granulated garlic
- Oil for frying, enough to fill a large pot with 1-2 inches
Instructions
- Dredge cod pieces in flour, shaking off the excess.
- Dip them into the beaten eggs, allowing the liquid to coat evenly before moving on to the panko mixture.
- Press the panko firmly against the cod, ensuring each piece is well-coated.
- Repeat the process until all fish pieces are ready for frying.
- Heat 1-2 inches of oil in a large pot to 350 degrees.
- Fry cod in small batches to avoid overcrowding, about 2-4 minutes per side.
- Transfer the fish to a cooling rack placed atop a baking sheet in the warm oven to keep warm and crisp.
- Serve immediately and enjoy the flavors of your perfect fried cod.
Notes
Consider double-dipping the cod for extra crunch. Use seasoned panko breadcrumbs or add spices for additional flavor.
