Ingredients
- 400g fettuccine or penne pasta
- 2 chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, chopped
- 200g sun-dried tomatoes, chopped
- 250ml heavy cream
- 100g grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chicken and cook until golden brown.
- Stir in the garlic and sun-dried tomatoes, cooking for an additional two minutes.
- Reduce the heat and incorporate the cream, followed by the Parmesan cheese. Mix until the sauce becomes smooth.
- Season with salt and pepper to taste.
- Toss the cooked pasta into the sauce, ensuring each piece is well-coated.
- Serve hot, garnished with fresh parsley.
