Ingredients
- 1 lb walleye (2 fillets)
- 1/4 cup panko breadcrumbs
- 1/4 cup Parmesan, finely grated
- 1 egg
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 lemon, for drizzling
Instructions
- Preheat the oven to 400°F (200°C). Line a baking tray with foil and spray with non-stick cooking oil or butter.
- If the fish is frozen, thaw it completely.
- Crack an egg into a shallow bowl and whisk until blended.
- In a separate bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. Stir to combine.
- Pat the fillets dry, dip them in the egg wash, coat with the dry mixture, and place on the baking sheet.
- Sprinkle any remaining dry ingredients over the fillets.
- Bake for 15 minutes until flaky and golden brown.
- Drizzle with lemon juice before serving.
