Ingredients
- 2 (225g) boneless, skinless chicken breasts
- Salt
- Black pepper
- 80g all-purpose flour
- 2 large eggs
- 240ml bread crumbs (panko)
- 60g finely grated Parmesan
- 5ml dried oregano
- 5ml crushed red pepper flakes
- 5ml garlic powder
- 240ml marinara sauce (store-bought or homemade)
- 120g shredded mozzarella
- Chopped fresh parsley, for serving
Instructions
- Slice each chicken breast horizontally to form 4 thin slices, seasoning both sides with salt and pepper.
- Put the flour in a shallow dish, adding a generous pinch of salt and some black pepper for taste. In a separate dish, whisk eggs until smooth. Mix panko, Parmesan, oregano, crushed red pepper, and garlic powder in a third shallow dish.
- One by one, coat the chicken slices with flour, shaking off the extra. Submerge them in the eggs, allowing any surplus to drip off, and then press into the panko blend, ensuring both sides are thoroughly coated.
- If needed, work in batches. Lay the coated chicken pieces in a single layer inside the air fryer basket. Set the air fryer to 400°F and cook, flipping once, until fully cooked, approximately 5 minutes per side. Add marinara and mozzarella on top of each piece. Continue cooking at 400°F until the cheese is bubbly and golden, roughly 3 more minutes.
- Serve the chicken on plates and sprinkle with fresh parsley.
