Ingredients

  • – olive oil spray (for greasing)
  • – 4 salmon fillets, skin removed, about 140 g each
  • – 1/2 lemon
  • – 1/4 teaspoon (1 ml) salt
  • – freshly ground black pepper
  • – 3 tablespoons (45 ml) mayonnaise
  • – 6 fresh basil leaves, minced, plus more for garnish
  • – 3 tablespoons (45 ml) grated Parmesan or Romano cheese


Instructions

  1. Warm up the air fryer to 400°F. Lightly coat the basket with olive oil spray.
  2. Drizzle the salmon with lemon juice and season with salt and freshly ground black pepper.
  3. In a small bowl, combine mayonnaise, minced basil, and 2 tablespoons of Parmesan cheese.
  4. Evenly coat the top of the salmon with this mixture. Add the remaining Parmesan cheese on top.
  5. Cook in the air fryer for 7 minutes, or adjust the time for thicker fillets.
  6. Set the oven to 425°F. Lightly coat a sheet pan with olive oil spray.
  7. Drizzle the salmon with lemon juice and season with salt and freshly ground black pepper.
  8. In a small bowl, combine mayonnaise, minced basil, and 2 tablespoons of Parmesan cheese.
  9. Evenly coat the top of the salmon with this mixture. Add the remaining Parmesan cheese on top.
  10. Place in the oven and bake for 10 to 12 minutes, adjusting based on the thickness of the salmon.
