Ingredients
- 1.5 lb salmon fillets (skin-on if possible)
- 2.5 tbsp Dijon mustard
- 2 tbsp honey
- 1.5 tbsp fresh lemon juice
- 1 tbsp olive oil
- 2 tsp minced garlic
- 0.75 tsp kosher salt (divided)
- 0.5 tsp freshly ground black pepper
- 0.5 tsp smoked paprika (or sweet paprika)
- 0.5 tsp lemon zest (optional)
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together Dijon mustard, honey, lemon juice, olive oil, minced garlic, 0.5 tsp of kosher salt, black pepper, smoked paprika, and lemon zest (if using) in a bowl.
- Place the salmon fillets on the baking sheet, skin-side down, and sprinkle with the remaining 0.25 tsp kosher salt.
- Spoon the honey mustard marinade over the salmon, ensuring even coverage. Marinate for at least 15 minutes.
- Bake in the preheated oven for 12-15 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven and garnish with chopped parsley before serving.
