Description

A delightful one pot meal combining tender salmon, vibrant cherry tomatoes, and creamy orzo pasta, perfect for busy weeknights.


Ingredients

  • 6 salmon fillets (115 g each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Season salmon fillets with salt and pepper, and place them in the pot. Cook for about 4-5 minutes on each side until golden and cooked through. Remove salmon and set aside.
  2. In the same pot, add the cherry tomatoes and spinach, sauté for 3-4 minutes.
  3. Add orzo and chicken broth to the pot, bring to a boil. Reduce heat and simmer for about 10-12 minutes until orzo is cooked al dente.
  4. Stir in heavy cream and Parmesan cheese, and mix well.
  5. Flake the salmon and gently fold it into the orzo mixture. Cook for another 2-3 minutes until everything is heated through.
  6. Garnish with fresh basil before serving.

Notes

Taste as you go and adjust seasoning as necessary. Consider adding seasonal vegetables for a personal twist.
