Description

A refreshing dish combining tender shrimp, tangy lime juice, and crunchy vegetables for a perfect appetizer.

Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 1 cup tomato juice
  • 1/4 cup lime juice
  • 1 avocado (diced)
  • 1/2 cucumber (diced)
  • 1/2 red onion (diced)
  • 1 jalapeño (minced)
  • 1/4 cup fresh cilantro (chopped)
  • Salt and pepper to taste
  • Tortilla chips or crackers for serving

Instructions

  1. In a large bowl, combine the shrimp, tomato juice, lime juice, avocado, cucumber, red onion, jalapeño, and cilantro.
  2. Season with salt and pepper to taste and gently mix all ingredients to combine without mashing the avocado.
  3. Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes.
  4. Serve chilled alongside tortilla chips or crackers.

Notes

Use high-quality, fresh ingredients for the best flavor. Adjust the heat of the dish by varying the amount of jalapeño.
