Description

A vibrant and healthy Mediterranean dish featuring tilapia with fresh vegetables and herbs, perfect for any meal.


Ingredients

  • 3 cups baby tomatoes, halved
  • 1/2 cup Kalamata olives, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 small shallot, diced
  • 4 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 tilapia fillets
  • Fresh parsley for garnish
  • Cooked rice for serving


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a baking dish, combine baby tomatoes, Kalamata olives, green bell pepper, shallot, garlic, sun-dried tomatoes, olive oil, oregano, salt, and black pepper.
  3. Transfer the baking dish to the preheated oven for 30 minutes to roast the vegetables.
  4. After 30 minutes, remove the dish and burst any unbroken baby tomatoes.
  5. In a separate bowl, mix cumin, paprika, salt, and pepper, then sprinkle this mixture over the tilapia fillets.
  6. Place the seasoned tilapia fillets on top of the roasted vegetable mixture in the baking dish.
  7. Return the baking dish to the oven and bake for an additional 10 minutes or until the tilapia is cooked through and flakes easily with a fork.
  8. Garnish with fresh parsley and serve immediately over a bed of cooked rice.

Notes

For added texture, sprinkle with feta cheese before serving. Experiment with seasonal vegetables for variety.
