Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the olive oil, garlic, lemon juice, oregano, salt, and pepper in a bowl.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the marinade over the salmon fillets.
  5. Scatter the cherry tomatoes and olives around the salmon.
  6. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
  7. Garnish with fresh parsley before serving.

Notes

Store any uneaten salmon in an airtight container in the fridge for up to three days. Reheat gently in the oven to maintain moisture and flavor.
