A flavorful and healthy Mediterranean dish featuring seared salmon fillets served over zesty lemon orzo pasta.
Ingredients
- 4 salmon fillets
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 2 cups vegetable broth or water
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper and sear them for about 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Add orzo and stir for 1 minute. Pour in vegetable broth (or water) and lemon juice. Bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is cooked and has absorbed most of the liquid.
- Stir in lemon zest and season with salt and pepper.
- Serve the orzo topped with the seared salmon and garnish with chopped parsley.
