Description

A flavorful and healthy Mediterranean dish featuring seared salmon fillets served over zesty lemon orzo pasta.


Ingredients

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 cups vegetable broth or water
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish


Instructions

  1. In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper and sear them for about 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté until fragrant.
  3. Add orzo and stir for 1 minute. Pour in vegetable broth (or water) and lemon juice. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is cooked and has absorbed most of the liquid.
  5. Stir in lemon zest and season with salt and pepper.
  6. Serve the orzo topped with the seared salmon and garnish with chopped parsley.

For optimal flavor, use high-quality vegetable broth and ensure your skillet is preheated. You can customize with seasonal vegetables like spinach or cherry tomatoes.
