Ingredients
- 2 tbsp of butter
- 2 tbsp of extra virgin olive oil
- 1 chopped onion
- 1 sliced carrot
- 1 tbsp of flour
- 3 medium potatoes, peeled and cubed
- 1 pound of boneless white fish (cod, halibut, or haddock)
- 4 cups of chicken broth
- ½ tsp of smoked paprika
- Salt and pepper to taste
Instructions
- Heat the butter and olive oil in a thick-bottomed pot over medium heat. Sauté the chopped onion and sliced carrot until soft, about 3 minutes.
- Stir in the flour, ensuring it combines well, then add the cubed potatoes, cooking for an additional minute.
- Pour in the chicken broth, bringing the mixture to a boil.
- Add the white fish and smoked paprika, covering the pot. Allow it to simmer while stirring occasionally until the potatoes are soft, approximately 15-20 minutes.
- Serve hot, garnished with fresh herbs if desired.
