A light and flavorful dish featuring white fish fillets baked with cherry tomatoes, black olives, and fresh herbs.
Ingredients
- 4 white fish fillets
- 1 cup cherry tomatoes
- 1/2 cup black olives
- 3 cloves garlic, minced
- 2 tablespoons fresh herbs (basil or parsley), chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the white fish fillets in a baking dish.
- Scatter cherry tomatoes and black olives around the fish.
- Sprinkle minced garlic over the fish and vegetables.
- Drizzle olive oil on top and season with salt and pepper.
- Bake for 20-25 minutes or until the fish flakes easily with a fork.
- Remove from oven, garnish with fresh herbs, and serve immediately.
Notes
Use a meat thermometer to check if the fish has reached an internal temperature of 145°F (63°C). You can experiment with different fish varieties if you prefer, such as cod or tilapia.
