Ingredients
- 4 cod fillets
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the cod fillets in a baking dish and season with salt and pepper.
- Combine cherry tomatoes, Kalamata olives, olive oil, lemon zest, lemon juice, and minced garlic in a bowl, and mix well.
- Pour the tomato and olive mixture over the cod fillets.
- Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
