- 2 shallots, thinly sliced
- 2 lemons, thinly sliced

- 1 cup champagne vinegar

- 6 bay leaves
- 2 tablespoons celery seed
- 1 tablespoon granulated sugar
- 2 teaspoons crushed red pepper
- 1 teaspoon salt
- 1 pound large shrimp, peeled and deveined, cooked (tails left on)
Instructions
- In a large jar, combine the sliced shallots, lemons, and minced garlic.
- Add the champagne vinegar and extra virgin olive oil.
- Include the chopped dill, bay leaves, celery seed, granulated sugar, crushed red pepper, and salt.
- Gently mix the ingredients to incorporate all flavors.
- Finally, add the cooked shrimp, making sure they are well-coated.
- Seal the jar and refrigerate for at least 8 hours before serving.
