A vibrant and fresh loaded seafood salad featuring shrimp, crab, and scallops, perfect for summer gatherings.
Ingredients
- 1 pound of cooked shrimp, peeled and deveined
- 1 cup of crab meat
- 1 cup of scallops, cooked and chopped
- 2 cups of mixed greens
- 1 cup of cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup of red onion, finely chopped
- 1/4 cup of fresh parsley, chopped
- 1/2 cup of mayonnaise
- 1 tablespoon of fresh lemon juice
- Salt and pepper to taste
Instructions
- Prepare all seafood by ensuring the shrimp, crab, and scallops are cooked and chilled.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and parsley.
- In a separate small bowl, mix the mayonnaise with lemon juice and season with salt and pepper.
- Gently fold the seafood into the vegetable mixture.
- Drizzle the mayonnaise dressing over the salad and toss gently until coated.
- Serve immediately, or chill briefly in the refrigerator to meld flavors.
