Description

A delightful dish combining roasted potatoes with seasoned meat, fresh veggies, and creamy avocado for a hearty meal.


Ingredients

  • 4 medium potatoes
  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 1 cup corn
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1 cup lettuce, shredded
  • Sour cream (optional)
  • Salsa (optional)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cube the potatoes, then toss them in olive oil, chili powder, cumin, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, until crispy.
  3. In a skillet, cook the ground meat over medium heat until browned. Drain excess fat and season with salt and pepper.
  4. Once the potatoes are done, assemble the bowls by adding a base of roasted potatoes topped with cooked meat, diced tomatoes, corn, avocado, cheese, and lettuce.
  5. Serve with sour cream and salsa if desired. Enjoy!

Notes

For extra crispy potatoes, consider parboiling them for a few minutes before seasoning.
