Ingredients
- 4 medium potatoes
- 1 pound ground beef or turkey
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup diced tomatoes
- 1 cup corn
- 1 avocado, diced
- 1 cup shredded cheese
- 1 cup lettuce, shredded
- Sour cream (optional)
- Salsa (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cube the potatoes, then toss them in olive oil, chili powder, cumin, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, until crispy.
- In a skillet, cook the ground meat over medium heat until browned. Drain excess fat and season with salt and pepper.
- Once the potatoes are done, assemble the bowls by adding a base of roasted potatoes topped with cooked meat, diced tomatoes, corn, avocado, cheese, and lettuce.
- Serve with sour cream and salsa if desired. Enjoy!
Notes
For extra crispy potatoes, consider parboiling them for a few minutes before seasoning.
