Description

A vibrant dish of tender shrimp and chewy orzo pasta tossed with fresh spinach and a bright lemon garlic sauce, perfect for any occasion.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups orzo pasta
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp, season with salt and pepper, and cook until pink, about 3-4 minutes.
  4. Remove the shrimp from the pan and set aside.
  5. In the same pan, add the orzo and stir for 1 minute.
  6. Pour in 4 cups of water or broth and bring to a boil.
  7. Reduce heat, cover, and simmer until the orzo is tender, about 8-10 minutes.
  8. Stir in the wilted spinach, cooked shrimp, lemon juice, and lemon zest.
  9. Mix well and serve with Parmesan cheese if desired.

Notes

Use high-quality shrimp for the best flavor. Add a pinch of red pepper flakes for extra heat if desired.
