A vibrant dish of tender shrimp and chewy orzo pasta tossed with fresh spinach and a bright lemon garlic sauce, perfect for any occasion.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups orzo pasta
- 3 cups fresh spinach
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In a large pan, heat the olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp, season with salt and pepper, and cook until pink, about 3-4 minutes.
- Remove the shrimp from the pan and set aside.
- In the same pan, add the orzo and stir for 1 minute.
- Pour in 4 cups of water or broth and bring to a boil.
- Reduce heat, cover, and simmer until the orzo is tender, about 8-10 minutes.
- Stir in the wilted spinach, cooked shrimp, lemon juice, and lemon zest.
- Mix well and serve with Parmesan cheese if desired.
Notes
Use high-quality shrimp for the best flavor. Add a pinch of red pepper flakes for extra heat if desired.
