Description

A comforting and nutritious fish chowder that combines fresh cod, creamy broth, and hearty vegetables, perfect for family gatherings and cozy nights.


Ingredients

  • 1 lb cod fillets
  • 2 cups corn (fresh, frozen, or canned)
  • 2 medium potatoes, diced
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  2. Add the diced onion and cook until softened.
  3. Stir in the diced potatoes and corn, cooking for a few minutes.
  4. Add the broth and bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Add the cod fillets and cook until the fish is opaque and flakes easily.
  7. Stir in the heavy cream, and season with salt and pepper to taste.
  8. Serve hot, garnished with crispy bacon and chopped parsley.

Notes

For an added flavor boost, squeeze some lemon juice over the chowder just before serving, or add a pinch of red pepper flakes for a hint of heat.
