Ingredients
- 1 pound chicken, diced
- 1 pound sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 2 cups rice
- Salt and pepper to taste
- Olive oil for cooking
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and sausage. Cook until browned.
- Add shrimp and cook until pink.
- Add bell pepper, onion, celery, and garlic. Sauté until tender.
- Stir in tomatoes, chicken broth, Cajun seasoning, rice, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is cooked.
