Description
A vibrant and flavorful Italian seafood salad featuring tender octopus, succulent shrimp, and rings of squid, all tossed in a zesty citrus dressing.
Ingredients
- 1.5 lbs of tenderized octopus
- 8 large shrimp, peeled and deveined
- 4 tubes of squid, cut into rings
- 1 rib of celery, chopped
- 2 bay leaves
- 2 lemons, zested and juiced
- 3 tangerines, zested and juiced
- 3 cloves of garlic, minced
- ¼ cup of olive oil
- 2 tsp of honey Dijon mustard
- ¼ cup of fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Boil water in a large pot with salt and bay leaves. Once boiling, add the octopus and reduce to a simmer for approximately 45 minutes, or until tender.
- Prepare the shrimp by peeling and deveining them, and cut the squid into rings.
- Remove the octopus from the pot and allow it to cool before cutting it into bite-sized pieces.
- In a separate bowl, zest and juice the lemons and tangerines. Combine the citrus juices with the minced garlic, olive oil, and honey Dijon mustard in a mixing bowl. Whisk until well blended.
- Toss the octopus, shrimp, and squid in the dressing, ensuring everything is well coated.
- Add the chopped celery and parsley, then season with salt and pepper to taste.
- Serve chilled or at room temperature.

Allow the salad to marinate for at least 30 minutes before serving for enhanced flavors.
