Description

A simple yet satisfying dish featuring cod fillets topped with a crispy panko mixture, perfect for weeknight dinners.

Ingredients

  • 4 cod fillets (fresh or fully thawed frozen)
  • 1 tsp salt
  • 1 tsp pepper
  • 4 tbsp butter (or olive oil for a lighter option)
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1/4 cup fresh parsley (or 1/3 dried parsley if fresh isn’t available)
  • 1 tbsp lemon zest (bottled lemon juice may substitute)
  • 1 tbsp olive oil (optional for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare your baking dish with parchment or a light greasing.
  2. Pat the cod fillets dry with paper towels to ensure better seasoning adherence.
  3. Season the fillets with salt and pepper on both sides.
  4. In a small bowl, melt the butter in the microwave or on the stove. If opting for olive oil, mix it with the melted butter for a lighter alternative.
  5. Stir together the panko breadcrumbs, garlic powder, chopped fresh parsley, and lemon zest into the butter mixture until all ingredients are well combined.
  6. Spread the breadcrumb mixture evenly over the seasoned cod fillets.
  7. Drizzle the optional olive oil over the topped fillets for extra flavor and moisture.
  8. Bake the cod for 15-20 minutes or until the fish flakes easily with a fork and the topping turns golden brown.
  9. Serve hot, garnished with additional parsley and lemon wedges, if desired.

Notes

Using fresh ingredients ensures the best flavors. Consider adding a sprinkle of paprika for extra heat.
