Description

A delightful dish featuring flaky salmon paired with vibrant spinach and gooey mozzarella cheese, perfect for busy weeknights.

Ingredients

  • 4 (6-ounce) salmon fillets
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add olive oil to a skillet over medium heat and sauté minced garlic for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  4. Place the salmon fillets skin-side down in a baking dish. Season with salt, pepper, and dried oregano.
  5. Spoon the sautéed spinach evenly over each salmon fillet.
  6. Top each fillet with shredded mozzarella cheese.
  7. Drizzle lemon juice over the cheese and salmon.
  8. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the cheese is bubbly and golden.
  9. Serve hot with lemon wedges on the side.

Notes

Consider adding crushed red pepper flakes for heat or using different cheeses like feta for a unique twist.
