Ingredients
- 6 boneless skinless chicken thighs
- 1/4 cup (60 ml) chopped cilantro
- 1/4 cup (60 ml) lime juice
- 1 tablespoon (15 ml) lime zest
- 2 tablespoon (30 ml) s olive oil
- 3 cloves garlic (minced)
- 1 teaspoon (5 ml) chili powder
- 1 teaspoon (5 ml) cumin
- 1 teaspoon (5 ml) kosher salt
- 1 teaspoon (5 ml) black pepper
- Pinch Red Pepper Flakes (Optional )
- 1 cup (240 ml) corn (fresh or frozen)
- 1 red sweet pepper
- 1 can black beans (drained)
- 1 cup (240 ml) shredded cheese
- Avocado (sliced (or guacamole))
- Sour Cream
- Salsa
- Cilantro Lime Rice
Instructions
- Prepare the marinade by mixing lime juice, lime zest, cilantro, olive oil, garlic, and spices in a large bowl. Coat the chicken thoroughly with this mixture, cover, and refrigerate for at least 30 minutes or up to overnight.
- Warm up a grill or a sturdy pan on medium-high heat and lightly grease it. Cook the chicken on the grill or pan for 5-7 minutes on each side until fully cooked. Take it off the heat and let it rest for at least 5 minutes before cutting into slices.
- In the same pan (use foil or a cast iron pan if grilling), add the sliced peppers and sauté for 3-4 minutes until they are soft. Remove the peppers, add corn to the pan, and sauté for another 3-4 minutes until heated through.
- In a medium serving dish, layer about ½ cup of prepared rice (we recommend cilantro lime rice for burrito bowls), chopped romaine lettuce, grilled chicken, cooked peppers, beans, corn, sour cream, avocado, and your preferred salsa.
Notes
- Add a dash of red pepper flakes to the marinade for an extra kick of flavor.
- Make sure to rinse and drain the black beans before adding them to the bowl for a cleaner taste.
- Personalize your bowl with toppings like diced tomatoes, jalapenos, or a squeeze of fresh lime juice.
