Ingredients

  • 1/4 cup unsalted butter (60g)
  • 1 cup (240 ml) hot sauce
  • 1 cup honey (240ml)
  • 2 Tablespoons fresh lemon juice (30ml)
  • 1 Tablespoon (15 ml) lemon pepper seasoning
  • 2 teaspoon smoked paprika (5g)
  • 1 and 1/2 teaspoons (3 ml) salt
  • 1 and 1/2 teaspoons (3 ml) onion powder
  • 1 and 1/2 teaspoons (3 ml) garlic powder
  • 1 teaspoon (5 ml) lemon pepper
  • 1/2 teaspoon (3 ml) cayenne pepper
  • 1/2 teaspoon (3 ml) hot chili powder
  • 1 cup cornstarch (120g)
  • Nonstick cooking spray
  • 1lb fresh chicken wings, split into drums and flats (450g)
  • 1 lime, sliced
  • 2 cups cold water (480ml)
  • 2 cups white vinegar (480ml)


Instructions

  1. Place the chicken wings in a bowl, then add the lime slices, cold water, and vinegar. Mix thoroughly with your hands to clean the wings, then drain the liquid.
  2. Arrange the drained wings on a baking sheet lined with paper towels, and use another sheet to thoroughly dry the wings.
  3. Set a wire rack on another baking sheet and put it aside.
  4. Heat the air fryer to 390°F. Mix the seasonings together in a small bowl.
  5. In a medium bowl, place the chicken wings and sprinkle them with 1 and 1/2 tablespoons of the seasoning mix.
  6. Toss the wings using a wooden spoon or your hands until they are evenly covered with the seasoning.
  7. In a different bowl, mix the cornstarch with the leftover seasoning blend.
  8. Coat each wing lightly with the seasoned cornstarch, shaking off any excess, and place them on the wire rack as you go.
  9. After all the wings are coated, lightly spray the air fryer basket with cooking spray, then arrange the wings in a single layer.
  10. Cook the wings in the air fryer for 25 minutes, turning them every 5 minutes. Add more cooking spray on top after 10 minutes. While they cook, prepare the sauce.
  11. In a medium saucepan over medium heat, melt the unsalted butter.
  12. When the butter has melted, add the hot sauce and honey, stirring until they are fully mixed.
  13. Stir in the lemon juice and lemon pepper seasoning, then bring to a simmer.
  14. Remove from heat and whisk until smooth.
  15. Transfer the wings to a clean, large bowl and drizzle some sauce over them. Toss to ensure they are fully coated.
  16. Reserve the extra sauce for dipping. Serve the wings immediately and savor them!
