Ingredients
- 5 lb (680 g) sweet potatoes, peeled and cut into 1/2-inch cubes
- 2 TBSP (30 ml) avocado oil, or olive oil
- 1 tsp (5 ml) chili powder
- 1 tsp (5 ml) smoked paprika
- 1/2 tsp (3 ml) sea salt
- 1/8 tsp (1 ml) cayenne, more or less depending on your heat preference
- 2 TBSP (30 ml) freshly squeezed lime juice
- 2 TBSP (30 ml) honey
- Zest of 1 lime
- Chopped fresh parsley or cilantro, for garnish
Instructions
- Begin by setting the air fryer to 400°F for preheating.
- Remove the peel from the sweet potatoes and dice them into 1/2-inch pieces, then place them in a large bowl.
- Pour the avocado oil onto the sweet potato cubes and mix until they are coated. Sprinkle the chili powder, smoked paprika, sea salt, and cayenne over the potatoes and stir again to ensure they are evenly seasoned.
- Once the air fryer reaches 400°F, lightly spray its basket with cooking oil and arrange the sweet potatoes inside, making sure they form a single layer.
- Air fry the sweet potatoes for a total of 12 minutes, shaking the basket well halfway through, at the 6-minute mark.
- In the meantime, blend the honey, lime juice, and lime zest together in a small bowl.
- After cooking, move the sweet potatoes to a large bowl and pour the honey-lime mixture over them, tossing to cover them thoroughly.
- Add a sprinkle of freshly chopped parsley or cilantro on top before serving.
