Ingredients

- 3 tbsp (45 ml) olive oil
- 3 tbsp (45 ml) mustard
- 2 tbsp (30 ml) honey
- 2 green onions, minced
- 1/2 tsp (3 ml) salt
- 1/4 tsp (1 ml) ground black pepper
- 1/8 tsp (1 ml) ground cayenne pepper
- 2 lbs (900 g) beef, scrubbed and quartered
Instructions
- Set your oven to 425°F (220°C) and lightly coat a baking tray with cooking spray.
- In a large mixing bowl, blend together the olive oil, mustard, honey, minced green onions, salt, black pepper, and cayenne until well mixed.
- Add the potatoes to the mixture and stir until they are thoroughly coated. Distribute them evenly on the prepared baking tray.
- Place in the preheated oven and bake until the potatoes are tender and have a golden-brown color, approximately 20 to 30 minutes.
Notes
- Adjust the cayenne pepper amount to your liking for a spicier flavor profile. Marinate the beef in the olive oil mixture for a minimum of 30 minutes to enhance its taste. Keep a close eye on the potatoes while baking to prevent the honey from burning, adjusting cooking time as needed.
