Ingredients
- – 3 lbs (1.4 kg) fresh chicken wings, split, tips removed
- – 1 cup (240 ml) honey
- – 3 tbsp (45 ml) canned chipotle chiles in adobo, puréed
- – 2 tbsp (30 ml) Dijon mustard
- – 2 tbsp (30 ml) vegetable oil
- – sea salt and freshly ground black pepper
- – 2 tbsp (30 ml) vegetable oil
- – 2 tsp (10 ml) ground coriander
- – 2 tsp (10 ml) ground cumin
- – 2 tsp (10 ml) smoked paprika
- – 2 tbsp (30 ml) sesame seeds, toasted (for garnish)
- – 3 green onions, thinly sliced (for garnish)
Instructions
- Set your oven to 375°F or prepare your grill to medium-high heat.
- Ensure the chicken wings are thoroughly dried.
- In a small bowl, combine the honey, chipotles, Dijon mustard, and 2 tablespoons of vegetable oil, mixing well. Halve this mixture, reserving one portion for tossing the wings after they are cooked.
- In a large bowl, combine the coriander, cumin, paprika, and the other 2 tablespoons of vegetable oil. Season this mix with sea salt and freshly ground black pepper.
- Add the chicken wings to this mixture in the large bowl, ensuring they are evenly coated.
- Arrange the wings on a baking sheet lined with parchment paper, then place in the oven or on the grill for roughly 10 minutes. Apply the honey-chipotle glaze and continue cooking for an additional 10 minutes. Turn them over, apply more glaze, and continue baking or grilling until they are fully cooked, about 10 minutes, or until they reach an internal temperature of 165°F, verified with a meat thermometer.
- Take the wings out of the oven or off the grill and toss them with the remaining honey-chipotle glaze. Garnish with sliced green onions and sesame seeds before serving immediately.
