Description

A vibrant and flavorful dish featuring marinated shrimp stacked with creamy avocado and seasoned rice.

Ingredients

  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 garlic clove (minced)
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked jasmine or basmati rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon salt
  • 2 ripe avocados (diced)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • Chopped cilantro
  • Extra lime wedges
  • Sesame seeds

Instructions

  1. Whisk together honey, lime juice, olive oil, garlic, chili powder, salt, and pepper in a bowl.
  2. Add the shrimp and toss to coat. Marinate for 10–15 minutes.
  3. Season the cooked rice with rice vinegar and ½ teaspoon salt.
  4. Toss the diced avocado with lime juice and ¼ teaspoon salt in a separate bowl.
  5. Heat a skillet over medium-high heat. Cook the marinated shrimp for 2–3 minutes per side until pink and cooked through.
  6. Remove from heat and set aside.
  7. Layer seasoned rice, avocado, and cooked shrimp using a food ring mold or clean can.
  8. Garnish with cilantro, sesame seeds, or lime juice.

Notes

Marinating shrimp enhances flavor and texture. Adjust honey and lime juice based on personal taste.
